Food and Drink of the Nord Pas De Calais
The Pas de Calais region is notable for rearing turkeys and chickens, for growing chicory and for its sea food. There is also a deer farm in Fiennes, an ostrich farm at Zutkerque and a specialist producer of snail products in Tournehem.
Most products are grown and reared by family-run businesses and are sold at their own farm shops as well as at local markets. These are held on two sites in Calais on Wednesday, Thursday and Saturday mornings. There are also weekly markets in Ardres, Audruicq, Guines and Marquise.
Moules (Mussels) de Bouchots de Oye-Plage

Oye-Plage to the north east of Calais is the site of a moule sea farm operated by the Bouchots family. Each year they harvest 300 tons of moules growing on 30,000 posts which are sold at their farm shop and in local fish shops. Open Monday, Wednesday and Friday from 16h to 18.45; Tuesday, Thursday and Saturday from 10-12 and 16,00-18.45. Also sold at Délices de la mer, Bd La Fayette, Calais and at Audruicq market.
Fromage de chèvre fermier (Goats cheese from the farm)

This farm produces fresh and flavoured (pepper, garlic, chive) goat cheese. Specialities include soft white cheese and tarts to order. Open to the public – visitors welcome every day from 10am to 7pm. Also sold at both markets in Calais on Saturdays. Fromage frais from 2,50€
Apples and Fruit Juices

Natur’Pom are producers of apples and fruit juices. Products sold include warm apple/lemon/cinnamon juice, chicory lemonade, hampers of regional products, soups. It is open to the public and visitors can also take a tour of the orchard and farm and see the fruit juice production. A farm shop is open daily (9.00am-6.00pm); group tours every day 2-5pm. The region around Calais still produces a lot of chicory and the last traditional roasting plant is to be found at Oye-Plage. Visitors are welcome to come along, touch and smell the sweet scent of just roasted chicory. Open to the public every day from 8 to 12am and 1.30 to 5pm. Closed Saturday. Also sold at La Ferme in Bld Gambetta, Calais. Paquet de chicorée: 1€ a kg; Chicorée liquide: 250 ml 2€.

Nicolas and Séverine Delcroix rear 200 ostriches on their small farm and sell Ostrich meat, delicatessens, terrines, painted eggs, feathers and leather goods. The farm is open to the public Wednesday and Saturday 9-12 am and Friday 2-7pm. Their products are also sold at La Printanière, 10 rue royale, Calais and at Calais market on Saturday morning. Meat 24€ a kilo; Terrine 5€ for 180grams.

Jean-Marie BUTEZ is one of the main producers of asparagus for restaurants and shops in the Calais region during the growing season between April and June. Brothers Antoine and Joachim Bernard have been gradually increasing cheese production at their farm and now produce up to 20,000 cheeses a week. The small town of Licques is famous for its Turkey Festival which is held on the weekend before Christmas when birds parade through the village before heading off to the Christmas dinner table. Licques poultry is denoted by a red label – an attestation of quality rewarded to just 500 food producers in France.. Locally reared birds are sold in the town and in the surrounding area and markets. The farm shop is open Monday-Friday from 8am-5pm and on Saturday mornings and tours can also be booked.

Founded in 1812 the Persyn distillery was revived after the Second World War and is now one of only three outlets in France producing the ‘genievre’ eau de vie. It is made of rye, oats and barley with juniper berries added on the third distillation and today, using the original traditional method, it produces 300 hectolitres of pure alcohol each year. Tours by appointment – shop open Monday-Saturday 9.00am-12.00pm and 2.00pm-6.00pm.

Saint Omer beer is one of the best selling beers in Calais. Founded in 1866, the brewery is still sited in the streets of old Saint Omer. It was bought by Andre Pecquer in 1985, who cut the range of products and invested in up-to-date production facilities. Today the brewery specialises in light French lager-style beer and produces 600 million 25cl green bottles a year. Over 40% of the output is exported and Saint Omer beer can often be found under own label French beers sold be the major British supermarkets. Groups of 20-50 persons can book a 1.5 hour tour of the brewery.
